Valter Nassi was more than a restaurateur—he was a force of nature, a walking celebration of life, and the soul of Salt Lake’s fine dining scene. Though he passed away in 2022, his presence still lingers in every corner of Valter’s Osteria: in the sparkle of a wine glass, the aroma of garlic and sage, and the heartfelt greetings that begin every meal.

From Monte San Savino to Main Street, USA

Born in the hilltop town of Monte San Savino, Italy, Valter learned hospitality at his mother’s side—watching her cook, serve, and care for others with selfless grace. Those early lessons shaped his life’s mission: to make every guest feel honored, heard, and at home.

He brought that mission with him across the ocean, first to New York, then to Salt Lake City—where he transformed the dining culture of an entire city.

“He made everyone feel like the most important person in the room,” said longtime friend and NBA legend Gregg Popovich.

Sharing Italy, One Meal at a Time

Valter was never just selling food—he was inviting you into his family’s kitchen.

“I don’t want to give you just a plate—I want to give you a story,” Valter would often say.

He redefined service by making it personal. He’d memorize your name, your favorite dish, the wine you loved. He greeted Celebrities and first-time diners with the same reverence.

And if you were lucky, he’d stop by your table with a pot of something—plated on fresh grated cheese, of course.

Valter’s passing in 2022 left a hole in the hearts of many. But the legacy he built is stronger than ever.

In the flick of a tablecloth, the call of “Buonasera!”, and the quiet perfection of a handmade ravioli, Valter lives on.
